At age 20 I "discovered" fitness and began teaching group exercise. I have been teaching classes for almost 40 years now! I have always enjoyed cooking since my home economics class in high school. When I wanted to get creative with cooking my teacher, Miss Melhouse, let me come into the classroom when it was available and create. When I began raising my own family these two worlds collided with a commitment to seek out ways to not only cook and prepare fabulous, delicious food, but to make that food healthier by adding more nutrition and reducing the fat, sugar and other unhealthy ingredients. In an effort to keep or improve the flavor, I started swapping out the ingredients typically used in our favorite dishes with healthy alternatives.

Having now become a Certified Clinical Nutritionist and Cooking School Instructor, it has been my mission to teach and share with others how to make healthy food taste great! My mantra is "You don't need to forgo flavor to enjoy healthy, nutritious food." My dream has long been to share my love of fitness and healthy cooking with others. I have spent 30 years creating recipes and the last 3 years editing, cooking and photographing my recipes for my own cookbook. "Healthy Food gets Fabulous" is now done! In my cookbook there are many delicious recipes featuring my swap out secrets.

A few years ago I entered a major Cooking School Instructor Competition and won! Here's a quote from that competition: "Cappie wowed the crowd and the judges this weekend with her upbeat, positive personality, great food and her message that healthy food does not have to compromise full, delicious flavor. Certified in nutrition and fitness, Cappie is on a mission to make healthy food taste great. A true 'swap out queen' she enjoys the challenge in taking our favorite foods from fat to fabulous -- both in taste and in nutritional value."

So my message to fitness professionals is to dream it, work at it and accomplish it. There are so many rewards in doing what I love, teaching fitness classes, cooking classes and finishing my cookbook for others to enjoy.
