Our Favorite Fourth of July Recipe

With the Fourth of July just days away, you probably have plans to attend a family get-together or a barbecue with friends, and these parties typically feature a lot of (mostly unhealthy) food. But you can still serve delicious, healthy fare that everyone will love. These Chicken Caprese Sliders are a perfect Fourth of July dish that are absolutely delicious, festive and so simple to make. And while they feel like a real splurge, they’re actually very healthy!
Chicken Caprese Sliders
Ingredients (makes 4 sliders):
1/4 whole-wheat baguette
4 chicken breasts (3-ounces each)
1/2 red bell pepper
3 tablespoons balsamic vinaigrette
1/4 cup basil
4 tablespoons fat-free feta
Directions:
Grill chicken breast on each side for 7 minutes or until grill marks appear.
While the chicken is on the grill, thoroughly wash the red pepper and slice it into 4 large pieces. Slice the whole-wheat baguette into ¼-inch slices.
Once the chicken is close to being fully cooked, place the red peppers and baguettes on the grill. Grill each side for about 2 minutes or until grill marks appear.
Remove the chicken, peppers and baguettes from the grill and allow them to cool for about 10 minutes.
Place a piece of chicken and a red pepper slice on top of the baguette. Next, place 1 tablespoon of feta cheese on top of the red pepper. Lastly, garnish the slider with 1 tablespoon of chopped basil and drizzle 1 tablespoon of balsamic on top. Enjoy!
